D.I.Y Infused Chocolate Peanut Butter Vegan Ice Cream Recipe
Cannabis edibles can be healthy, vegan, potent and yummy!
This recipe for cannabis infused vegan ice cream is gluten free and lightly sweetened. We used our Dr. Raw Relax 20:1 High THC coconut oil cannabis tincture to infuse the ice cream. Since we use ultra distilled cannabis oil in all of our products, they are odorless and flavorless so they are amazing to infuse with.
Servings:
Makes 8 ½ cup servings/scoops @ 20mg THC per serving
Infused the THC:
Dr. Raw Relax Formula Tincture- 160 mg needed for the recipe
250 mg/500 mg Bottle- 16 .6 ml droppers
1000 mg Bottle- 8 .6 ml droppers
Ingredients:
2 cans organic coconut cream
100 grams sweetener (half granulated/half liquid)
Granulated options: cane sugar, coconut sugar
Liquid options: maple syrup, vegan sweetened condensed milk, agave
I used 50 grams coconut sugar and 50 grams vegan sweetened condensed coconut milk
1 pinch sea salt
3-4 tsp vanilla extract, or extract flavor of choice. Can use vanilla bean pods or vanilla bean powder
½ – ¾ cup cocoa powder, more or less based on preference
½ cup Organic peanut butter, unsweetened
Totally can add more based on preference, or so many other ingredients!
Leave out the cocoa powder for a vanilla base
160 mg Relax Formula Tincture
Process:
Freeze a metal bread loaf pan for a least an hour before starting.
Using either a stand mixer or food processor, mix all ingredients except the peanut butter or about 3 minutes.
Pour into cold loaf pan.
Place in freezer for 30 min.
Stir well in pan or re-blend and return to pan.
Put back in freezer for 1 hour. Re-stir or blend and return to freezer for 2-3 hours.
Remove from freezer- drop in clumps of peanut butter and re-blend.
Return to freezer and freeze for at least 6 hours or overnight.
Scoop and enjoy your cannabis infused vegan ice cream !
Tips:
This can be done in an ice cream maker. Just follow the instructions for your device.
The more you stir in the freezing process the creamier your ice cream will be. It prevents ice from forming.
